It's not cheddar, usually it's factory processed cheese, and may even be an oil based "cheese", (hydrogenated vegetable oil with flavourings) one that has never seen milk. An upmarket burger restaurant will (should) use real cheese but your fast food types will use the chemical factory cheese.
