Because that's the safest way to travel in the desert. Being with more people reduces the risk of being robbed and killed, the same if someone in the caravan gets sick. Camels are the only means to travel there, since there aren't any roads in the desert and they are the only animals who can endure the heat.

Because there are no roads in the desert. Caravans were used mainly in desert areas .
It is very safety for desert travel and used as protection against invaders. 1st carvans were horses, then donkeys, and then camels.
