I have been told to not use my phone while it is charging. Why?

The only reason I know is that the charger connection is awfully flimsy and it might be best to avoid jerking it around.

You use battery power while using your phone, thus negating the charge it's currently trying to take. Every time you charge a battery, you're making it somewhat weaker.
Using the phone uses battery power. If you're using battery power while it's trying to charge, it won't charge properly.
When you use your phone, it uses battery power. Using the phone while it's charging defeats the purpose of charging it.
