Soy and almond milk is called milk because it is a replacement for milk in your diet and it is very similar to milk. You use them on your cereal in the morning or in your coffee instead of milk from the mammary glands of an animal such as a cow. Basically they call it milk because you are supposed to buy it instead of milk for lactose or health or belief reasons. If they called it soy juice people would think it is used like orange juice or apple juice, when it isn't anything like those products.
As for coconut milk, basically it is a white liquid that superficially resembles milk. It was probably named when the white man discovered the coconut, and they didn't really care if it was actually the same as the stuff that baby animals drink, just that it resembled it enough to have the same name.
I would suggest doing some research and looking at the package. Some milk replacements might not act the same as milk in baking. I remember my dad used almond milk in corn pudding [a baked dish] instead of milk, so you might be in luck.
So if I drink beer or wine instead of milk, can I call it beer milk or wine milk. Calling soy juice - milk is fraud. Call it what it is not what it is used in place of. People use Tofu instead of meat. I don't see them labeling it Prime Rib! All of these milk replacements are extremely resource wasters. The amount of water used to irrigate almond trees is obscene. It takes 1.1 gallons of water to grow ONE Almond!!
so could i use almond milk to make stuff like homemade bread?
i've been trying to use less animal products for a while. this weekend i had more beef then i should've. but i do eat eggs still.
