Why igneous rocks refered as mother of rocks?

Igneous eroded to give sedimentary that get heated to make metamorphic and if those are heated further become igneous again. The rock process begins (and ends) with igneous rocks hence "mother". Also when the planets were "new" all rocks were igneous and all variation came later.
