Why does the number of neutron differ in isotopes?

Actually, the number of neutrons in an atom determines what isotope it is. For instance, carbon-12 consists of 6 protons, 6 neutrons, and 6 electrons, but something like carbon-14 would be 6 protons, 6 electrons, but 8 neutrons.
