i feel like I have striped throat when this occurs, and I'm scared of swimming with my head down, because it will probably happen if I swim head in water. This is not recent, and this has been happening almost my whole life.

Why? It's called osmosis. Body fluids have a certain saltiness. Sodium salt makes the cells absorb water and potassium salt makes the cells dump water. Plain water upsets the balance of moisture in the cells and that causes an unpleasant sensation.
As for swimming, you are supposed to breathe through your mouth. That means a muscle at the back of your nose closes off the nostrils so no water can enter. What, you never noticed that?
