My fiancé shuts down a lot. You may say, stonewalling, but we never argue. He’s the perfect man. We are literal soul mates. But every so often he just shuts off. He mumbles and doesn’t interact and goes completely deadpan. I’ve looked up the main issues but I just get “stonewalling” advice, which is not what this is. He a can be having fun, interacting and just stop talking. Out of the blue. I talk to him after and he thinks about it and says thinks like “we walked into a games store and I just felt off.” “He says it’s nothing I did. When he like this he goes super quiet and kind of sarcastic. It’s like he’s someone else. We thought he was just super introverted but it happens even when he’s been on his computer or by himself recharging. Should I take him to a dr?

He may be experiencing social anxiety and is embarrassed to talk about it. So he deals with it with sarcasm and shutting down. Since your noticing it's when your out, and at home. I would look into what exactly what he's doing on the computer or "recharging."
Approach the subject delicately and maybe get him to see a professional . Good luck.
