A few years ago I noticed certain foods started to taste different. Coffee with creamer tastes like cheddar cheese. I know this sounds crazy, but candy leaves a cheese aftertaste in my mouth. I know this seems funny, but it honestly ruined some foods for me. Is this psychological, or did my taste buds change? If you relate please tell me.

Creamer contains chemicals trying to make it taste like milk, but to me it tastes like "cheese-zilla". One thing that makes a difference is air bubbles in the coffee, which you get by stirring it. Try pouring the coffee from one cup to another and no creamer.
In my case I am not sure what cheese tastes like. I buy the sharpest cheddar I can get because anything else is tasteless. Sometimes I get pepper jack. That's different, but only because of the pepper.
