Why did the Nazis have such a relatively easy time conquering and then occupying so much of Europe?

Because the Nazis were the best fighting force in the world at the time. Their pilots were better trained, their tanks were stronger than anyone else's, and their soldiers were fierce, dedicated, and basically fearless. On top of that, they used Blitzkrieg to quickly dominate the opposition. Most of Europe probably wasn't prepared for such an attack either
