Why cant dogs eat chocolate?

There's something in chocolate that if dogs (and any animal) eats too much they'll die. I know for dogs they can eat they're body weight (or around that) before the chocolate actually starts to poison them. With my dog she ate a whole entire box of chocolate and shes fine, but if she ate 3 boxes she'd to go to the vet...
