When I delete an email in Gmail, does Google also delete that data from their servers?

Maybe, they delete original letters (text information), but some information (words) left for advertisement purposes. I think it must be written in Private Policy.

Google created Gmail to be a "Spy Free" Email service. All of your Emails (received and sent) are encrypted via HTTP (hypertext transfer protocol) so the only way anyone or any agency can spy on your emails is if they have a way to hack the system. I assume that cannot all be done remotely. Gmail is also password protected so it makes it more difficult to break into the system and/or your account.

The chances of someone breaking into your Email and spying on you are very slim unless they have your password. Especially now that some services offer fingerprint passwords for Smartphones etc.
