Nutritionally speaking. Could I survive and what health risks would it pose?

That doesn't give you license to eat as much cheese as you want, however, because it also contains saturated fat and sodium, which aren't good for you. While low in amount, Mac and Cheese does actually contain fiber. It's roughly 1 gram per serving.
