There wasn't a single war in which all colonies won independence. For instance, in the Eighty Years' War (1568–1648), the Low Countries won independence from Spain. In the Mozambican War of Independence (in 1970), Mozambique fought for independence from Portugal. And in the American War of Independence (1775–1783), America sought independence from Great Britain. Some British colonies remain part of the Commonwealth and are not truly independent despite self-government.
Depends on what you mean by colonies as the United States itself was born out of the rebellion of American colonies against the British (Revolutionary War). Then you have the Southern States which seceded from the United States to become the Confederate States of America (Civil War). Of course The American colonists won against the British, and the Union defeated the Confederates.
