I'm starting my freshman year of college in two months and need help! I want to work with people all over the world. Providing food, shelter, clothing, medical care, etc. What should I major in? (It was suggested that I major in Political Science? Does this sound anywhere in the ball park?)

You don't have to major in anything or even go to college to help people overseas. Just join the Peace Corps. But as you've already been accepted to college, my recommendation is to find something that you enjoy/ are interested in with the expectation that after you graduate you will join a volunteer organisation and only go into the field you majored in in college after you decide to settle back down in your home country, if at all.
That said, if you're intent on learning something useful in college for helping people, I'd go with some type of engineering (as in anything from agricultural to mechanical to civil engineering) and see if you can get some medical certifications during the summers. Maybe you can work as an EMT while going to university -- you'll have to research what's available near you.
