Your question is meaningless. It depends on what you mean by 'grow' and what you mean by 'quickly'. Most seeds will sprout in a few days and reach maturity within one summer.

Ok, go to sproutpeople.org/ and consider the different kinds of seeds they offer. I am guessing that wheat grass might be easier for you to measure growth, and I think they might have some advice for you if you describe your project to them. And best of all, you can eat the results.
BTW also check on the use of vitamin B1 and citric acid. B1 is used to promote growth of cuttings, and citric acid is used to promote sprouting of seeds and also yeast growth in bread dough. Here is where I learned that: www.tammysrecipes.com/node/2814
Sorry if I was being vague, I don't know a lot on this subject (probably obvious). I am doing an experiment for school to see if fertilisation affects the growth of a plant. I meant from seed to any sort of obvious sprout (height of stem, leaves) within the time of 2-3 weeks (as stated in the details).
