If someone's stuffed, it means they're full from eating a lot. Or some creepy guy emptied you out and stuffed you. But, it's most likely the first one.
In Britain, it means you are in a difficult situation with no obvious way out. For instance, if your rent is due and you don't have the money and have no way of getting it, you'd say, "I am stuffed".
