What is the effect of boiling on leaves?

It's called tea. Some leaves are nice, some are terrible, and some are poisonous.

I think you din't get my question. I want to know the reason why people of the former times boiled herbal leaves for medicinal use instead of directly taking it.

It's called tisane, which means water extraction. (Alcohol extraction is called tincture.) There is a long discussion of the process at en.wikipedia.org/wiki/Herbal_tea
