What happens If I don't pay my bike ticket in NYC?
I've got a bike ticket and I'm a international student. I didn't show my passport to the police. I just showed my school ID. that doesn't have any important information. What the cop filled in ID number was just part of my school ID's number.
However, I told him my address, date of birth and of course my name.
If I don't pay and ignore, is there any way to charge me?

In a few words, they only have my name, DOB and address. Do I have to pay?

Of course you have to pay. I assume you deserved the ticket. Pay the fine, move on. Or risk being identified and stopped at immigration the next time you enter the US and then have entry refused or worse, be detained.
