Would they act a certain way, or dress a certain way, talk a certain way? Would they belong to a particular church?

Science is anything that can be measured. Spirit is anything that can not be measured. Spiritual matters are not proven by logic. Science is proven by logic. No connection. The reason you can't "prove" God is that if you don't believe, then by definition all proof is nonsense. But if you study the bible for a while, you will eventually realize that it is all true, proven to your own satisfaction. Read a chapter of Proverbs every day. Proverbs has 31 chapters so you can keep your place by just looking at a calendar. There is no religion or nothing in Proverbs and you don't have to believe anything. Just read to find wisdom. When you are comfortable with that, then read the bible from Romans to 2 Thessalonians over and over until you start to remember what it says. That is the part that applies to Christians.
Most people have no clear idea what "spiritual" means. They have this muddled concept consisting of religion, scripture, various philosophies, incomprehensible sayings from people of eastern extraction, and they don't have any idea how these things differ or how to judge any of them as being right or useful or even sensible.
"Soul" is a good example. Soul is a Hebrew concept, a synonym for a living breathing creature. Creatures that don't breathe are not souls. Most people have no idea what the word means. Except musicians. Musicians are cool, and they know exactly what they mean by "soul".
Oh my, you asked a doozy of a question. There is no one definitive answer that will fit or satisfy every one.
Being spiritual is not a religion and basically has nothing to do with the usual religions. Christians get confused and may say they are spititual because they are Christian. They are off the mark. One has nothing to do with the other.
People might say they believe in god but don't go to church but they are spiritual. Basically used as an excuse to avoid Sunday service.
You might believe there is no god or heaven or hell but there is something on the other side. Spiritual.
They believe in guides, mother nature, have an affinity with trees stars, the cosmos, light candles, think there is a higher power of some sort, have integrity and rules to live by, help animals, the environment, the elderly, all spiritual.
Usually good people just not religious people.

At 1 Corinthians 2:14-16 Paul helps us to understand what a spiritual person is by drawing a contrast between a "spiritual man" and a " physical man". The " physical man" does not except the things of the spirit of God, they are foolish to him, and he can not get to know them. On the other hand, God is very real to the "spiritual man". The spiritual person examines all things, they follow Jesus footsteps closely. They find every opportunity to pray to God to be guided by his Holy Spirit. So, a spiritual person is inclined towards God, they strive to imitate God. They put forth the effort to have God's mind on matters, to look at things from his view point. They try to bring all their ways in harmony with God standards. Rather than focus on fleshly works the spiritual person endeavors to show the fruitages of the spirit found at Galatians 5:22,23: Love, joy, peace, patience, kindness, goodness, faith, mildness, self control.
The Bible speaks very highly of spiritually minded people. Matthew 5:3 says: "Happy are those conscious of their spiritual need, since the kingdom of the heavens belongs to them."
Romans 8:6 shows the advantage of being spiritually minded, saying: " setting the mind on the flesh means death, but setting the mind on the spirit means life and peace. So, By focusing on spiritual things, we gain peace with God and with ourselves now and the prospect of everlasting life in the future.
While our spiritual capacity stems from being made in God’s image, genuine spirituality is not realized through self-awareness, human wisdom, or personal achievement. It requires the influence of God’s holy spirit. In fact, those who refuse to be influenced by God’s spirit, choosing instead to pursue their own desires and ungodly things, are described as not having spirituality. They are driven by fleshly appetites and inclinations according to the thinking and ways of the world..—1 Corinthians 2:14; Jude 18, 19.
Read this example: “The way I understand it,” says Darren, who lives in Canada and has been married for 35 years, “a spiritual person always thinks about how his speech and actions will affect his friendship with God.” His wife, Jane, adds: “I think that a spiritual woman is one who works hard each day to make the fruitage of God’s spirit part of her personality.”—Galatians 5:22, 23.
Of course, a person does not have to be married to develop a spiritual attitude. In fact, the Bible teaches that each individual has the responsibility to learn about God and imitate him.—Acts 17:26, 27.

Spiritual people in simple words are those who realize that they are not the body that dies, they are not even the mind that they cannot find - they are the Divine Spirit or the Soul. To be a spiritual person, we must realize that the kingdom of God is within you - Luke 20:21. It is to realize that God lives in the temple of your heart - Corinthians 3:16. Then you realize that you are the Divine Spirit, that you are a manifestation of God. That is to be a spiritual person.
