I am auditoning for LSU's school of music in January, I am a little nervous because I am not a classical pianist, I am more of a Jazz/R&B pianist and I am just now entering intermediate playing.

Why don't you audition for Bachelor of Music in jazz instead, such as at Berklee College of Music?
For Mozart you could play the first movement of Piano Sonata in Bb, K333.
For Bach: Inventio 1 from his 15 2-part inventions.
Debussy: La fille aux cheveux de lin
Haydn: Keyboard Variations No.5 in C major perhaps?
You'll have to do a lot of practice, but if you have a jazz background rather than classical, you better stick with what you're best at for an audition.
