I have a Gibson Everly guitar and I would like an acoustic pickup. I have seen many acoustic pickups and most seem to sit over the sound hole but since the Everly has a raised pickguard, I don't know it that would even fit. Is there a good quality acoustic pickup that would work with my guitar?

You don't need to know all that, just be aware that it exists. With steel strings you use inductive pickups beneath the strings and a tube type amplifier. For any other instrument you use a capacitive microphone either in the sound hole or built into the bridge, and a transistor amplifier.
