Many argue that when God says, "Let Us make man in Our image, according to Our likeness ..." (Gen. 1:26, NKJV), the plural pronouns ("Us" and "Our") include the heavenly host, or angelic beings. If so, wouldn't this mean we're made in the image of angels (again, "Our image," not "My image")?

What is this, you're working at being confused?
Psalm 12:6 The words of the Lord are pure words: as silver tried in a furnace. [Words] of earth, purified seven times.
The added word is justified because "of earth" is plural, agreeing with words, not singular to agree with furnace. God speaks to us in our own Earthly languages, not in codes or incomprehensible allegories. Stop looking for confusion where there is none.
Well, if the royal "we" wasn't used back in Bible times, then it seems like that interpretation would be the one spoken "in codes or incomprehensible allegories." Is the royal "we" interpretation just reading a modern mode of speech into ancient literature, or is there reason to think otherwise?
You can see what you can see. You might call it "royal we" but the bible does not say that. The bible just talks the way people talk, and people say "Let's (plural) do this" all the time and there is no confusion. Stop working at being confused.
When people say, "Let's do this," multiple people are always included in the "Let's." So if God saying "Let's" refers to multiple, divine Persons, the passage makes sense. But if all of the sudden, things have changed here and only ONE Person is being referred to, that would be what makes me "confused."

The bible clearly shows who, 'Let us make man in Our image means," at Colossians 1:15-16,'He is the image of the invisible God, the firstborn of all creation; because by means of him all other things were created in the heavens and on the earth, the things visible and the things invisible, whether they are thrones or lordships or governments or authorities. All other things have been created through him and for him.' Also, he is before all other things, and by means of him all other things were made to exist.' We know He referring to God's son is no other than Jesus Christ himself. So God's first born (Jesus) is the image of God and by means of Jesus God made everything in existence including man. Hence the reason why God said let us make man in Our image,speaking to his Son Jesus.
Proverbs chapter 8 clearly shows that God created Jesus before the beginning of times, that is before anything or anyone was created. Proverbs 8:30 Jesus himself says,'Then I was beside him(God) as a master worker. I was the one he was especially fond of day by day; I rejoice before him all the time.' Here it shows that Jesus was besides his Father as a master worker, helping him with all creations, hence again another reason why God said let us make man in Our image.

The Creator is a spirit; he does not have a physical body as we do, so we are in his “image” in that we can reflect his personality, displaying a measure of his fine qualities. Humans have the capacity to chart their lives according to principles, that is, according to what they believe to be a code of right action.
