I need some help I'm writing an essay on this topic and don't know where to start!

There is nothing wrong with all girl and all boy schools. It keeps the hormones and testosterone from ruining the educational process.
Separation of the sexes is only at school so claiming that's how the kids learn how to be social is silly. There is plenty of social interaction at malls, clubs, churches, gyms, restaurants, movies, with friends, with family at their homes or inviting them to your home etc etc etc.
How you start any project is research and that doesnt mean going to a question and answer site and having it handed to you. It means going to a library and finding studies that have been done or finding an all boy or all girl school and actually telling a teacher you are writing a report on it and ask their opinion or Googling information. It means doing your own work. Good luck.

The question of "should" is easily overshadowed by this or that social agenda. The current agenda is to deny all differences between the sexes and force everybody into a single mold. That results in a lot of broken people because boys and girls are not the same. They need different guidance to grow up in a healthy manner. For instance, girls are stronger and more aggressive than boys up to about age 18. The boys know it's not supposed to be that way, and they need time to grow stronger and learn how to act like men. They need to be protected from competition with the girls during that period.
People who prattle about "education" often have no clue about what the word means.
