I got white toothpaste and put a drop of blue food coloring on it to see if it would stain my teeth blue. I brushed my teeth normally and as a result my teeth turned "whiter" and shortly after I got a headache. Is this normal? Should I be worried?

You really should do some research before performing an experiment. A search at google.com often stops you before you start.

The first thing you learn is that nearly all food colors are coal tar derivatives, related to gasoline and motor oil. The second is that most are acids. You don't want to put acids on your teeth. Acids dissolve calcium. That's why your teeth hurt.
Dentists say toothpaste is not needed for brushing teeth. It may have some benefit, but it's brushing that gets the job done. That would apply to anything else that you might put on your teeth except food. Teeth normally absorb nutrients from the saliva. You brush to remove the accumulated food and allow the absorption to take place.
