What is the most challenging part when you are looking for a gift or making a surprise for your girlfriend? :)

You have to guess what to get, and you better guess right. The only safe way to buy a gift is to notice something she already has, like a certain brand of perfume, and get bath oil or something of the same brand. Second best is to go to the big department store at the mall and ask a female clerk to pick something for you. And wrap it. It has to be wrapped real purty.
