We were watching a show and I was joking around with him and I made a neighing sound (long story). He pinched me and told me to be quiet. He claims it was a light pinch, but it stung. When I explained to him that I didn't appreciate it, he told me that I was overreacting and making him out to be a bad, abusive boyfriend. I told him that I didn't think he was abusive, and asked him if the roles were reversed, would he be okay with me pinching him and telling him to be quiet. He said that he wouldn't have gotten upset like I did, and now he's mad at me.
I know it seems petty, but he refuses to apologize and, instead, claims that I'm overreacting and acting "crazy." I didn't raise my voice or anything, I simply got upset and told him that I didn't appreciate it.
Am I overreacting?
My boyfriend pinched me to get me to shut up. Am I overreacting by getting upset?

You told him you didn't appreciate it. That should be the end of it. You get to judge what you appreciate, he does not.
Be patient. It is quite normal for a young man to need to learn good manners. First on the agenda is to say "I'm sorry" when his lady takes offense, even if he is not sorry.
