I need unsweetened chocolate to help lower cholesterol levels and just wondered if I could melt down baking chocolate and add some Stevia to make it palatable.

It depends on the type of chocolate you are using, which brand, which type of choco, etc. It could be pure or processed. If it IS pure, you can add stevia. Of course, adding too much is bad, you can add pinches. if it is still too bitter to eat, you can eat it with milk or make it as a spread so that you eat little by little, yet it isn't too bitter. Of course, theres the other option of researching. Let me know if this helped! :)
I don't know enough about it. A friend was to go on Statins but chose the chocolate remedy instead and has dropped his cholesterol.

Thanks so much. I bought some chocolate chunks from the bulk section at SuperStore yesterday but it was definitely sweetened. I probably need to check out the dark unsweetened squares found in the baking section. I have eaten the 90% cocoa chocolate bars and no problem except I still want to avoid even that sugar. I like the stevia idea and will probably go with that. I had kind of thought baking chocolate was real straight basic chocolate in the raw but I'm learning even if there's no additives heat has likely been applied and I think I read somewhere that has destroyed some of the goodness.
