Is this the correct use of I or me? "Thank you for including Sarah and me for lunch on Sunday?"?

Without the question mark it becomes;
"Thank you for including Sarah and I for lunch on Sunday."
If you are asking then you could try;
"Could you include Sarah and I for lunch on Sunday."

There is no rule about the personal pronoun, however over 90% of the time "I" is the correct choice.
