I don't like eating fruit because of the texture, so I've started using the nutribullet. I literally just put in fruit, water and ice and I'm wondering if that's good enough to start a healthy lifestyle change.

You need to study some books about nutrition. One thing you will learn is that the human body can survive without fruits, but not without veggies. Another is that any processing, even removing a peel, destroys some vitamins.
The only reason to eat fruits is that you happen to like them. So if you prefer smoothies, well, there's your answer.
