As Dumbledore and Snape are dead, who would be Headmaster/Headmistress? Who would be Defence Against The Dark Arts teacher? If McGonagall got Headmistress, who would teach Transfiguration? And would Horace Slughorn still be Potions teacher? It is driving me crazy trying to figure it out!

I definitely think you can use some creative license in order to hire new teachers if you want to, but here is some of the staff that would still be at Hogwarts:
Flitwick
Sprout
Madame Pomfrey
Madame Pince
Septima Vector (Arithmancy)
Hagrid
Neville (if it's the same time period as Harry's kids)
I've read some fanfic where Draco, Harry, or other classmates are hired to fill positions like Potions or Defense.
