If I were to use a Sims 3 game (Such as seasons or High-End) other than the original Sims, would the mods not work?

All the mods should work unless indicated. A popular site is modthesims.info, and they are good about letting you know if the mod will work with an expansion. Some mods may not work because they are already included with the new expansion or an update, like the spiral staircase.
All mods should work, if the mods are updated to the latest patch, and of course your game is. Although, mods like Nona's super hamper that automatically collects laundry will not work, unless you have got an Expansion pack, Stuff pack or Store content downloaded that enables laundry. Some other mods also require certain EPs or SPs, other than that, if everything is up to date, and you have placed your mods in the right folder, they should work.
