Everything has a beginning except for God, and a reason why it began. People have theories, and different stories but what is the real reason?

You are assuming a lot of things that are not true. For instance, God did not create animals, He commanded the waters to produce them. Genesis chapter 1 records just three occasions when God created: verses 1, 21, and 27.

Colossians 1:15-17 States that Christ is, "the first born of all creation". Who then was the creator of all these things? Are we to assume that the animals evolved from the water?
The question was why did he crate them?

From the beginning, it was Jehovah's will for earth to be filled with perfect children of Adam and Eve. Jehovah loves people, and it is his will that obedient humans live the way he intended.
Love played a key role in Jehovah's creative work. It wasn't that he was lonely or need companionship, he's complete and self contained, lacking nothing that someone else might supply. His love, an active quality, naturally moved him to want to share the joy of life with intelligent creatures who could appreciate his gift of life.
Why did Apple create iPod? Why did Apple create iPhone? That is because Apple wanted to do it. The manufacturer decides what to create. So, why do we have to ask God why he created this universe? He is the Creator! He decided He wanted to create the mountains and the seas, the rivers and the trees, and He created you and me. Instead of asking the question why did God create, and instead of trying to find the beginning and the end of God, we have to learn to surrender to God because God is beyond human comprehension. God is like the ocean which we are trying to empty in our bathtub, our bathtub is too small for the ocean. The human mind is too small to comprehend God. Therefore, instead of worrying about theories, we must go in quest of God, starting with self-realization and going to God-realization.
Your question demonstrates a very common mistake: people only know what they have been told by random preachers, never thinking to read the source books for themselves. Preachers are very poorly trained in doctrines; they spend all their time studying their denominational misunderstandings. For example, 1 Corinthians 12, 13, and 14 give detailed instructions on how to conduct a worship service. Not one denomination follows them. A few denominations give the impression that they read the chapters, but failed to understand them, and the result is a totally wacko pageant. Most denominations simply make up their own doctrines.
It is not reliable to let people tell you what the bible says. Many people will make up stuff because they don't know what it says, and many will make up stuff because they wish it would not say what it says. You just have to read it for yourself. Read a chapter of Proverbs every day. Proverbs has 31 chapters so you can keep your place by just looking at a calendar. There is no religion or nothing in Proverbs and you don't have to believe anything. Just read to find wisdom. When you are comfortable with that, then read the bible from Romans to 2 Thessalonians over and over until you start to remember what it says. That is the part that applies to Christians.
