English is not my mother language so excuse me for grammar mistakes. I really love spanish culture and everything so I was wondering how to say? Hispanic at heart, Hispanic in heart, Latina at heart, Latina in heart or something different?

The expression is "at heart" and I don't know any reason for that. It's just the way we talk. But it's better to only say "I really love Spanish culture and everything" because that can't be misinterpreted. Many native English speakers never learn what the expressions actually mean and they come up with some very strange impressions.
