I have an IPhone 6 and for some reason my mail (which I never use) is now using 1.2 GB of my phones storage? How do I get rid of this? I'm using the latest version.

Try logging onto your mail account on the server, not the phone.
Exchange, IMAPI or POP3 protocols might not push all folders to your phone such as server sync issues.
Don't forget, calendar items can also store attachments.
Additionally, if you are using Google Mail for example, it is part of your Google Drive account, which if you have items in Google Drive, it will lower your mail account size.
