ATTENTION ALL NUTRITION EXPERTS/ EXPERT COOKS!!!!

I am actually asking this question on behalf of my friend! We are embarking upon a healthy lifestyle phase of our lives. I am aiming to improve my fitness through exercise as well as eating healthily. The only reason I don't eat healthily now is basically boredom and laziness, and won't be too hard for me to rectify this, as I love salad, seeds, pulses, nuts and vegetables as much as I love chocolate and cake! I feel really excited to start cooking healthy meals from scratch. My only limits are I don't like really spicy food, I am allergic to Aubergine and I HATE coriander. Aside from that, I will eat anything!
I am here to ask some advise for my friend. She is a far fussier eater than me and we are 'diet buddies.' I would love to help her come up with some recipes for inspiration and motivation - but I can't find anything she will eat!!! Please help me! I am looking for 5-6 recipes each for breakfast, lunch and dinner and I don't know where to start!
Here is what she won't eat -
Peas, Brussel Sprouts, Broccoli, Cauliflower, Sweetcorn, Tomato (Unless canned/cherry), Hummus (or any other kind of dip!), Crisps, Salad (in general, but will eat iceberg lettuce, cucumber, and peppers when in a wrap with something else) Chickpeas, any kind of bean (aside from green beans), asparagus, avocado, courgette, aubergine, swede, squash, sushi,
She does eat pretty much any fruit.
She also does not like oats, bulgar wheat or quinoa!
She works from home, but would still like easy, healthy meals. She prefers to eat a hot meal in the evening with her Husband when he comes home from work. She hates mornings and would like a breakfasts that involve no cooking or very little cooking that you can prep the night before.
Any suggestions would be greatly appreciated!
