I have a PDF that I want removed from my name - how does one go about doing this?

option 1.
you could create a new user. That should solve the issue.
option 2.
File> Export as PDF then right click the "properties" of the PDF file. in the second tab "PDF Information". It shows the author.
How to remove personal information? I do not want my name to be shown in the PDF document information.
