How do you avoid getting an infection in a burn? What should I do and what should I avoid?

I have never tried any of this. This is what I have gathered from various books.

First: no oil, no butter, no ointment.

If you can get it instantly, ice or cold water reduces the injury.

Mix ascorbic acid (vitamin c) in water and spray the burn. Keep it wet all the time or as the patient wants it.
