It depends on how complex you want the calculation to be. In traditional physics, you would say that it remains travelling horizontally at 10m/s. But you could also say that its direction has now changed and there is also a vertical component of velocity. However, the bullet is also being acted on by air resistance.
The question could become hugely complicated. The simple answer is 10m/s, but that's not the only answer.
