The recipe calls for fat. Many cooks use shortening because it is cheap, and if someone can't eat animal fats they can get vegetable shortening. The tastiest crusts are made with butter, the flakiest are made with lard. There are many kinds of fat, but I never tried any others in a pie crust. You use veggie oil in a cake. If you add too much it turns into pudding.
