I have some instant cappucino mix (french vanilla) and it is rock hard. I have turned it back into a powder in my blender. But I am wondering if it's safe to use. It is probably 3 years old and I just opened the package.

Its probably safe, I doubt any of the ingredients can spoil. Chances are the only reason it got hard is because all the moisture from the mix evaporated. Like when the sugar in your sugar bowl or your brown sugar gets all clumped up. I recommend putting a slice of soft bread in the container. Thats how i fix my brown sugar. The sugar absorbs the misture from the bread and the bread turns crusty while the sugar gets soft again.
