Is it possible for there to be an equation that says we're missing a number in our numeral system? Like we skipped one when making our numeral system? I read some fiction and now I'm wondering whether this is possible or not.

Well, there are some such numbers, and a few people spend a lot of effort analyzing them. One such number is pi -- there are equations for pi, but they don't give answers, only more equations. Another example is e.
You only get those results when you define a number as the length of a line. If you use "counting numbers", then all numbers are defined, no limit.
This stuff is called "number theory" and there is a lot more to it than this.
