You are the legal owner of the gift given to you no matter what she says. She can call the police if she wants to but they wont arrest you, they wont even take the ring from you. They probably won't even respond in person...they have better things to do with their time.
Think of it like this...you give a friend a gift for Christmas...lets call it a scarf...then you decide you want that scarf for yourself...so you call the police and tell them she stole it from you....what happens next is you get arrested for filing a false report and probably obstruction of justice (thats what they call it when you lie to the police).
when you give someone a gift the item becomes the other persons property...plain and simple.
Oh and another thing...Congratulations on your upcoming wedding I hope everything works out for you and this point wont have any relevance...but the ring is yours wether the engagement is still on or not. It was given to you as a gift to symbolize his love for you, same as every other gift he has ever given you. If you were to break up, would you give back every single gift he has given you? Of course not...so what makes this piece of jewlery any different. Anyway, good luck to the both of you.
