HelloI rinse pasta after cooking to keep it from becoming gooey. Then you can season it. I didnot know it wasn't rinsed.
I would think the reason to not rinse it would be that all the nutrients would be washed away and some of the taste.
Once cooked and drained, pasta is coated with a starchy film. It gets removed if we rinse it after cooking. Rinsing in cold water brings the temperature of the pasta down & increase the looseness.
