Does vinegar take away the color of grass?

Vinegar will increase the acidity of the soil the grass is growing in and in all probability kill the grass. This will cause the grass to go brown so it does change the colour of the grass but not in a good way.
If you are imagining the vinegar bleaching the grass as it can with hair then the answer is no, it cannot do that. hair and grass have different biological reasons for being the colour they are and as such vinegar acts differently to remove the colour.

Yes it takes away the green color - replaces it with brown
