However, the statement that sourdough breads usually have big holes is outright wrong. Some country sourdough breads with 65% hydration have no big holes at all; it is the higher hydration that causes big holes.
I wanted to know if the original Poilane breads, baked in France, have big holes. Perhaps knowing their hydration would tell.
