No, if you get rid of Xbox live COMPLETELY you will have the latest version of minecraft you have updated to. For example, if you have Minecraft version... Say, version 1.2 (just as an example) and you cancel Xbox live, you will continue to have version 1.2. It will not get rid of the update, but you will not be able to update the game anymore if updates come out, because Xbox live is required. What you could also do is instead of canceling Xbox live, in case you are just saying that you want to get rid of gold, you could always downgrade to Xbox live silver...
