Do you think that it's "unacceptable" to still live with one's parents at age 16?

No, you should be living with your parents until at least graduating high school, as they provide all of your needs and basic comforts until you are an adult (or at least they should be). Once you go off to college or get a full-time decent paying job is when you move out. 16 is still a teen, there are very, very few circumstances when you should be moving out.

But I've seen 16 year olds being descriped as "young adults" (which actually makes sense as some 16 year olds are already post-pubescent), and it's a social norm that adults shouldn't be living with their parents anymore, right? Besides, an 18 year old is technically a teen too, but it's also the age of majority in most places.

Yes, your a "young adult" but you're still maturing. Even at age 18 your not done maturing, but at least you (hopefully) have a high school education, the bare minimum for most jobs.
