Many recipes call for green chillies. However green chillies are less sweet than Red and of course do not color the dish red. The particular cuisine in question makes a huge difference. It seems unlikely that Madras Curry made with green chilies would be very good, but a dish like chili-colorado could be made with flame roasted green chilies and colored/sweetened with sweet paprika to give it a more traditional flavor and appearance.
