With that I mean, if one could make a pen out of a hollow kind of wood, the same way one would make a quill out of a feather, and would it work like a pen? Would it suck up ink and scratch like it is supposed to? Or would it just make a mess?

This is a really original question. Yes, a pen could be made from wood. The big problem would be the tip. Quills are made of cells that allow them to be very flexible and so bend according to pressure and transfer ink onto the paper. Wood doesn't tend to act like that. Although some woods probably could.
